can a bulletproof vest stop a sword?

No.
Depends on the vest, and what you quite mean. Yes, a pl8 will stop a sword, especially a chunk of metal. Is kevlar stab proof? To a degree, but they do make specific stab proof vests.
tl;dr There is some overlap, but specific vests for that

Swords aren't arrows guy
Could a bulletproof vest made of swords stop a sword made of bulletproof vests?

Considering swords are just sharp sheets of metal you probably could.
You would need to take care not to cut yourself however

Some vests are rated for stab as well (or instead of) ballistics. Most are not, though.

If it has steel plate inserts it can, but most Bullet "Proof" vests aren't designed for stabbing. depends on the amount of shekels you pay.
It can probably handle slashes, but not stabbing for sure.
