What is the average number of 5.56 rounds delivered to center mass needed to kill/incapacitate an OPFOR?

Incapacitation in this instance means rendering the OPFOR immobile and unable to effectively retaliate.

Is 2 - 4 good enough?

Depends entirely on shot placement. One good CNS hit will instantly render someone permanently immobile, but someone hopped up on adrenaline can take a dozen through-and-throughs and keep going until they pass out from blood loss or shock.

That's why you just keep shooting until they go down. You're bound to hit or get a good shatter and knock out something important eventually.

Then your selector switch should never touch burst or full auto. Even if it's only 5.56, everything after your second shot is going to be pure luck past 10m. Video games lied to you, Full Auto is only about as controllable as "That general direction", even with an intermediate rifle cartridge.

It doesn't do me much good if I empty an entire mag to kill one target if I plan on engaging multiple people over a single day without re-supply. I just want a rule of thumb I can trust, and then supplement with additional firepower if needed.

It does you even less good to zip the fucker and have them waste you because you're anal about not wasting ammo. Keep shooting until the threat is removed. They might go down on the first, they might go down on the last round of the second mag. If you're looking for a greater probability of a quick kill on the first hit, you're using the wrong type of rifle cartridge. You should be shopping in the Battle Rifle range, as they were designed specifically for that sort of thing.

What would you recommend? I chose 5.56 because it's a more common cartridge in the states. But if given enough time I could stockpile 7.62 and rely on that exclusively, although getting more ammo in the case of a national emergency would be hell.

7.62x51 /.308 is common as fuck. It's probably the single most popular deer hunting round because in most situations it will kill quickly and humanely even without a CNS or vital hit — and it'll go through just about anything not specifically designed to stop gunfire and retain lethality without a second thought. Car doors, exterior structure doors, small trees, doesn't give a fuck. It doesn't go transsonic out of most platforms for 700m.

After plenty of personal experience with 5.56 out of an M16 and M4, I don't trust the round to reliably and quickly put down man-sized targets as a solo shooter.

Real-life physics dictates the damage a projectile inflicts on a human body. When I ask how many rounds on average are required to drop a grown man, I'm asking for a rule of thumb that can generally be relied upon to maximize casualties per round of ammunition.

There's absolutely nothing wrong with that. Sure, a bullet may hit their spine and drop them instantly, or maybe it will hit and go through soft tissue without rupturing any major organs, but this should all be factored in to the estimation.

Does any trauma publication publish survival rates by at least firearm type, if not caliber? While not 1:1 with incapacitation rates, it would be surprising if there wasn't at least strong correlation.

I've read a couple of forensic pathology texts where they state any yawing, expanding, or fragmenting bullet over 2000fps is bad news, but I haven't read anything approaching large sample data analysis.

Depends on how close you are, what barrel length you have, how fat they are, how they're presenting their body to you and how much clothing they're wearing.

From a 20" barrel inside probably 50 yards on a malnourished gook facing you head on, it'll ice-pick all day.

There is no real average number, wounding is complicated, there are dozens of factors to consider including target weight, presentation profile, range, angle, bullet weight, velocity, clothing worn, bullet type etc

Real life isn't video games, its possible to drop someone in one shot at 200m or half to pump 10+ rounds into somebody at 10m to get them to go down, it boils down to where you hit them exactly and what happens after you hit them
