stalker has garbage stealth mechanics. detection is pretty much on/off. once enemies are alerted, they know where you are immediately and lock on to you until you run out of the area.

Literally Arma stealthing is the hardest and most intense stealth in any game, and it is definitely more fun than your shit arcade games like stalker

Spacestation 13 is probably the most "realistic" stealth game you'll get and by realistic, I mean a game where you can use disguises to decieve real human players.

There's a gamemode where you play as an alien similar to John Carpenter's "The Thing" where you are an alien disguised as a human staff member and must absorb people's DNA. When you do that, you can shapeshift into your victim and don their clothing/gear to properly impersonate them. It will only require an attentive person or forensics to see through your disguise.

I prefer Thief: Deadly Shadows, myself.

This War of Mine has some good stealth mechanics. They were also tense as fuck. Other games with cool stealth mechanics is Metro. And other type of games that can be really stealthy are survival MMOs, you can follow players closely and kill them in the perfect moment without anyone noticing to get their loot.
