I don't understand why centurions haven't been put on planes yet to shoot down incoming missiles. I understand fighters are too light, but couldn't larger planes designed to carry a turret just fly in formation with fighters like how our navy works on the ocean to give CIWS?

No, it's a Gatling gun. The trigger is entirely synchronized to the rotation of the barrels and operated mechanically. All the shooty-bits will work when it is loaded and spun, whether spun by hand or spun by an electric motor.

Another thing to consider is that CIWS emits a huge radar signal to find and track its targets.
So for the possibility of maybe shooting down a tiny A2A missile, you have a huge "Shoot me!" signal on your plane.
Not being shot is far superior to possibly shooting down a missile.

Lasers on aircraft would be a huge bitch since you'd need to factor the weight of the laser itself AND the power supply/storage.

Maybe a C-130 loaded with nothing but a laser, power supply and tracking systems could be feasible, but you'll never see it on fighters.

Moreover, with a theoretically instantaneous projectile and range limited only by weather and the curvature of the Earth, why would you even need them in the sky?
