Modern Shaolin monks almost certainly cannot fight. They don't do training against fully-resisting opponents, and their techniques are largely theoretical as a result. They can't punch holes in your chest.

Some people can punch through 8 bricks with the aid of gravity and spacers.
If you ever watch a breaking demo (I've seen many in person) they always use spacers and they're always stacked so that a downward technique is used. This is important because the primary components to a successful brick break are
1. Gravity
2. Momentum (spacers allow for the limb doing the break to encounter each brick individually with minimal loss of inertia)

Spending your entire life training gymnastics is not necessarily going to make you better at fighting than a couch potato.
You'll have some of the building blocks of a good fighter (coordination and athleticism), but you wouldn't go from doing forms/kata to suddenly being able to fight just because you've perfected what is essentially a dance.
If you took a couch potato and taught him how to box, after about two months and without even a real conditioning program he would beat the dog shit out of someone who has done ethnic dances for 30 years.

They have enough soft sparring that they're probably fine. I'm sure they fuck around with each other outside of class too, they're mostly kids after all.
I agree that they'd mostly be destroyed by a good boxer, aggression is kind of lacking in Kung Fu.
