Its not even that its better on horseback, or that its easier to take off from armor if stuck, its actually because it gives you more chance to swing early and still hit.

That is because of the location of the blade as your arm moves when slashing from horse back.

Your swing just ends up having a larger window to achieve contact. And hitting someone from horse back is not as easy as it sounds.

Protects the head and the horse when blocking on a horse in defence causing the attack to slide away from the horse and head etc, longer cutting edge, stops the blade hitting the ground dismounted.

Something like a marmaluke sabre (pic) with the steep curve looks absurd until you realise the defensive positions in horseback sabre

For the same reason that the guillotine blade was oblique : It enhances slicing while minimizing compression.

Curvature helps you while parrying.
Also works better while cutting since more force is applied to significantly smaller area.

Every advantage listed here is moot unless you're moving really fucking fast.

Straightswords have more flexible CQC usages, if you're actually trained in them.

It can be a strain on the wrist, it's just easier to make the blade in a certain way and hold the wrist correctly.
That's also why eastern and especially indian grips on swords tends to be very short, it's partly in order to encourage a good wrist position.

Blade slides off while cutting, doesnt wedge into material, horse provides more than enough power to slash shit off

Loads and loads of horseback swords were made for thrusting though. Don't know if you implied that horseback swords should cut, but lots of people disagreed with that and for good reasons as the thrust is superior in the charge and for heavy cavalry.

I would say partially different armor types, as well as the far greater use of cavalry, different access to metals, and just cultural quirks.

Everywhere from Africa to Japan to the Middle East had almost exclusively curved swords (large knives don't count), they also tended to be of 2 main types, namely the Arabic type of curved, slender hacking blade, and the Oriental type of even thinner, straighter slicing blades.

Europeans began making swords in the bronze age, but they didn't have any semblance of fighting cavalry or anything other than foot soldiers and a few chariots. The eastern nations had swords probably before or at the same time as europeans, but they had perfected mounted combat far earlier than the west, and they tended to have less overall armour in the later years as it was too hot to get away with that much clothing.

Only if they have no armour or maybe shitty leather/fur armour, though. Katana's weren't the primary weapon of the Japanese anyway, pikes and bows were used by all soldiers and they didn't really use shields due to the culture. Katanas were side arms and couldn't be used against any metal armour in most cases unless you managed to stab in the gaps, even then katanas were kind of shit for that because they're like giant brittle knives more than swords.
