Vispuci Lapriso, by far.
He was an Italian born mercenary who actually fought and got out of one of the battles to break the Seige of Constantinople alive. There is a rumor he fought hand to hand for 6 hours straight to carve a path out through the Ottoman lines.
Back in Venice he became a high dollar personal guard, but was blacklisted for killing a man during his off hours who turned out to be some relation to a city controller. He continued to work though, and at one point city guards were sent to arrest him for defiance of his work restriction. He was said of have killed 16 city guards, then peacefully surrendering to the beuarcrat who had come along with the arrest papers.
He was released shortly after thanks to powerful relations he had cultivated. He died an old man living in southern Italy who hand crafted swords for younger men.

Aren't those kendo dudes exceptionally good with swords? I figure if you spend your whole life learning to smack someone with a wooden sword, you'll be pretty legit with a real one. They're so fast about bopping eachother.
Then again, a fencer probably has the advantage in terms of initial strike. Their weapons are so light and long. I bet top-tier fencers today are the best swordsmen in history when it comes to that dueling style.
Kendo would be hard to say for sure. It seems like japanese men might have had more time to devote to kendo in the past, and the art is based on tradition instead of winning. I'd say kendo has probably not as refined today as it once was.
I'd honestly put my money on some unknown European swordsman who trained with his brothers his whole life.

Modern fencing sucks
Modern fencers with actual epees or foils would immediately kill each other in a duel with their spastic sperg lunges with no concern for safety.
Hitting the other guy 0.005s before he hits you means you win in fencing, and in real fights, lose the duel 0.005s after the other guy.
