The struggle isn't getting ammo, as gp11 isn't hard to find or that expensive. Hornady makes hunting loads if you keep an eye out. The real struggle is reloading. You need Redding dies, as the Lee and other brands match a k11 chamber. Then you need to solve the gp11 berdan primer issue, because gp11 has decent brass and you'll end having plenty. But at least it uses a standard 30 caliber bullet, despite being called 7.5 cal.
TL;DR you will never want to lose your brass, especially hornady, but you won't since the brass ejects straight up and you will look like the brass catching zen master at the range.

Same guy, as a side note, mounting a scope is problematic. Please don't tap the receiver for a scout scope unless you don't mind heresy. Mine has a right side clamp mount that is decent but the brass hits the rings, so I had to put a deflector on it to make it work better and not hurt brass. Plan to pull the scope off and put a diopter on soon though. Going full Swiss competition aesthetic.

Look up reloading gp11. It isn't easy but I'm pretty sure hornady loads are boxer primed, so that's the easy option. Some guys fill the case with water and use the dies for hydraulic pressure to force the primer out. Some use a decapping tool. I'm pretty sure you can buy berdan primers and prime it yourself once you get the old primer out. Some guys drill the case to convert it to boxer. I haven't done any of this, im just sitting on a big pile of the stuff til I get around to doing it.

After the end of the production of GP11 in the early 90s and the selling of all the machinery to the serbs at Priv Partizan, there has been a huge demand for the cartridge in the civil shooting sport and the army reserves are running low. So it has been decided to make all new machinery. As of one year ago, a testrun of one million cartridges were made. It was split 50/50 between the army and selected gun clubs for testing and feedback. It features an all round crimp instead of the three point one of the last batches or the wax seal. The powder has been modeld after the characteristics of the old powder. Ive shot some myself and there are no differences. Even the extreme fudd sportshooters only found one thing to nag on: "It feels harder to chamber a round" so there is no difference between the new and old.

He doesnt. You want to know why? The only ammo that is being issued to soldiers is GP90, the 5.6 ammo. GP11 is not being shipped to the international clubs because their duties is to provide the possibility that a citizen who lives abroad may shoot his mandatory programm OP, and the Feldschiessen.
There is no soldier in any duty who has not been issued an Stgw90 in 5.6 caliber now.

Sry, aint nothing I can help you with. Best thing I can recommend to you is collect your brass and go through the bother of depriming. There will be some big production numbers but it will mostly be for the internal market of the ranges and the army, but there is no intention for export.
