What are some ideas for gear to pair with a bolt action .308 assuming that semi auto is restricted in OPs AO.
Looking for a way to carry and disperse loose rounds of .308 in a rifle that doesnt take stripper clips.
Is a cartridge belt the best bet? I prefer hinged floorplate to magazines but magazine conversion is inexpensive though 10rd single stack takes up alot of space and would snag in the bush alot.

Tbh OP stripper clips can be pretty useful for keeping the rounds together and easily strippable for your bag. I would get like 2 .308 mags and fill them up and just chuck em in your bag so you can strip rounds off the top to refill your cartridge belt when not in a combat situation in a timely manner, or as emergency "fugg I need rounds :DDD" dispenser.

Grab my hunting rifle and go innawoods if ever required and do the best I can to avoid contact but also to be in the best position I can be with what I have to efficently engage multiple threats or hunker down and defend my house at extended ranges.

i shoot FGMM and you can loop your belt through the plastic cartridge holders so its like a bootleg cartridge belt.
I'd go with the magazine conversion if fast reloading is essential to you.
Other gear, apart from the obvious suppressor and scope, I'd say a rear bag would be nice.
I'm more fond of resting the rifle on a pack rather than a bipod, but that's like, entirely up to you.
I'd just go with a simple pouch on your belt, keeps the rounds clean and can be used with pretty much any clothes as long as you have a belt.
Tikka CTR in 308. light weight rifle, threaded for a brake/suppressor, 10rd mags (no, they won't catch on stuff 'in the bush').

it would be very possible and horrific for your glass to get got and now you have a .308 stick with shotgun accuracy but no bead or spread.
I have a .308 single shot that I had setup for innawoods. I added a chamber insert that allows me to fire .32 auto. I figure a good 60grn jhp will work fine on small game out to about 50 yards. With a 100 yard zero on a mil-dot scope, the first dot on the lower leg was dead on with the .32 at 25 yards.

Also the Legacy magazine floor plates are hot garbage. There's so little tension on the magazine, and it flicks open too easily. Look around for an aluminum/steel floor plate that accepts AICS magazines if you can. There are retailers in America, and I know there is one guy making them in Aus

You could put a MOLLE or leather pouch on your belt like a WWI soldier. It'd be easy to get a modern version of pic related with tacticool plate carriers and MOLLE pouches.
