Is this a joke? Just read the codex, and match the country of origin to the class. Since you get 3 load out slots for each class, you can do a German/austriohungarain loadout, a British loadout, and an Italian loadout (or whatever suits you). Hell, even the tool tip for each gun says which army fielded it. I love bf1 cause I dig experimental designs, but the game is already horribly inaccurate from the start. If you really want an accurate experience, go play verdun. If you really want to be accurate in bf1 take an unscoped bolt action with no pistol.

-bolt action rifle. No Optics. No Foregrip. No Bipod. No personalized Paint Scheme. bayonet is ok
-no pistol. Sidearms were primarily issued to officers and specialty troops.

That's it. You are now a historically accurate rifleman for the WW1 period.
What a shame Battlfield 1 makes this loadout all but impossible to play and will never release modding tools to allow us to fix their garbage game.

Roll playing as an officer could work. Make sure you have a squad that follows your directions.
Having not played the game yet (I'm waiting for the full game to be released and the price to drop), I can't comment to much on the equipment. In general though, avoid gimicky game stuff like Flare Guns, Trip Wire Mines, Revive Syringes, etc.
A bipod for a machine gun is an example of equipment that is appropriate to the period. Try to use the machine gun as an area denial weapon, not as a run and gun crutch.
