The steel case in those mags is pissing me off.
Cheaper than a mag rig.
For your first 2 mags it makes sense, after that your better off dumping them in a dump pouch or well just dumping them in that configuration. it makes sense if you dont have a mag retention device or plan on keeping them.

If you did it like this, sure. The most I would do is 3 together, any more would be autistic. Should save you time otherwise spent reaching for another mag and storing the empty one. Good luck finding a place for your mag-enstein one all the mags are empty, though

Would the added weight do anything noticable to recoil?

Oh sure, it would reduce recoil. I mean you're adding a pound or so of weight. But generally I don't think it would be very noticeable. Maybe if you shot it once with full mags and then immediately shot it with empty mags you could tell the difference.
If you were looking to do this to reduce recoil, I'd use something permanent because recoil would slowly increase as you continued to shoot.
It is practical, more or less.
Only negative I could see is attempting to hold onto the mags once both are empty, but most modern militaries issue a dump pouch, so even that wouldn't be an issue.
