This is an incredibly vague request. Is your dad a history buff? If so, what part of history is he most interested in? Is he a fudd? What kind of budget are you looking at? Do you want something practical or something collectible?

Okay, with a $1000 price limit, you aren't going to get anything of much monetary value or historical value. You're looking at probably $1500 minimum for any kind of gun that'll tickle his fancy.

If he's a big fan of lever actions you could get a Henry rifle with the brass receiver for under that 1000 dollar price. One of the best looking rifles imo.

Colt 1860 Army or Remington 1858 clones, steel frame. Pietta is as good as Uberti these days. In fact, you can get him both revolvers for under $500 at Cabelas. Add a pound of black powder, some .44 balls (I'd recommed .454, but check some BP forums for the best fit for those models), some pre-lubed patches, some caps, a brass powder keeper, and a nice "possibles bag", and you've got a kit that will thrill him for a little over $600. If you want to go wild from there, get him a leather double gun belt to fit (not with bullet holders, not historically accurate for BP muzzleloading guns) and for under $1000, you've made his year, guaranteed.

My own dad was expressing interest in lever-action rifles, but I wouldn't know where to start.

I think the Marlin 1894 in 44 mag would be nice. Avoid 2011-2014 production and you'll be fine.
I'd do a S&W or Ruger revolver; blued 357 5" or more. Half underlug would be preferable. That or a CMP M1 Garand.
