More lugs=less the bolt has to rotate to lock/unlock, and it's harder to get a bolt to rotate large amounts in a semi-auto.

Steep angles could result in an insufficient locking surface, or could allow the bolt to slip out of battery. 2 lug designs usually have more space to rotate, which is fine, but multi lug bolts can be more compact.
