Hi OP!

You can get a lot of budget pump-action shotguns in 12 gauge for less than $300, sometimes even under $200. Single-shots go in this range as well, but are not quite as useful as pumps for obvious reasons. Buying used can be a good option for shotguns, because accuracy isn't as much of a question as is overall functionality.

.22LR rifles are often priced below $300. I also know the new Hi Point carbines float around the high $280's or so. They're quite good for what they are, and come in 9mm, .45ACP, and .40S&W. The Savage Axis series of bolt-action rifles tend to come under $300 if you get an XP model (comes with a bore-sighted scope). Last but not least, many military surplus rifles (such as Turkish Mausers) still fall under $300 but can still be expensive to feed. I'd recommend a Mosin but not one in the sub-$300 range, more like the Finnish variants such as the M39.

For handguns, plenty of budget 9mm semi-autos cost under $300. There are also budget .38SP P+ revolvers with a snub-nose barrel for low-profile carry.

Most people shit on Taurus but if youre on a budget they are a great option. .38 +p rated revolvers for 270$ area, PT738 is a better Ruger LCP for cheaper, and the PT111 G2 is 215$ price range on sale and are decent CC guns.

If you can find one the Swedish M/07s are typically in the $200-300 range depending on if they're Husquavarna or FN manufactured. Usually rechambered for .380, has a pretty great trigger with a clean break, is functionally identical to a colt pocket hammerless but with a longer barrel/slide and a last round hold open in addition to the manual lock. Only real drawback is the difficult disassembly process and heel release. Parts are also available from several online retailers like Stockholm's vapenfabrik.
