Find a good combat sports program (Judo, Scholastic Wrestling, MMA, Kickboxing, Boxing, Muay Thai, Savate, Sambo etc. etc.) and stick with it for a few years.

You'll be better off than 90+% of other people when it comes to hand to hand.

If you can find reputable people to teach the more tactical fantasy aspects like weapons. But you will very likely overestimate the amount of good effective material there is out there.
