SKS is probably your best bet. And accuracy wise, golden tiger is the ammo I'd buy.
The sks has a longer sight radius than typical 762x39 guns, so it's easier to be accurate than a typical ak.

Second for sks, good rifle and the price has come down a little

These 1/8in planter discs are relatively light at least. The actual digging discs will stop 54r cold, which is pretty good considering that they're only about 1/4in thick. 556 zips right through them though, pretty annoying.
