For years the Soviets used literally fucking trees with matches in them to light their rockets, so if shit went down they could just put up another half of a tree inside the rocket engine within an hour, whereas more complicated systems that fail on launch will probably push back your rocket launch to the next day

Eh, springs are better in every way if you can afford them. Rubber bands vary wildly in power with ambient temperature and humidity, and have a limited shelf life, especially when exposed to sunlight or high heat.
