What do you guys think of the stock glock "goal post" sights? I've never shot a glock before.

They work. They aren't like, great, but they do the job.
I had some guys at a local range very audibly snickering at my factory standard Glock as they shot their racegun Glocks. But I could hit a moving Texas star 5/5 at 15 yards and they couldn't, so ya know, the sights are as good as you make them.
There are better alternatives, but honestly they are fine.
Don't assume that spending 120$ on new sights will make you a pro shot. They will help, but you should get a firm grasp on shooting before you immediately go out and drop money on something like that

Was listening to Masad Ayoob interview a Chicago cop who has been in a shit ton of shooting/violent encounters and he said he rarely shoots distance and does a lot of point shooting. But he does switch out his sights.

10 foot guy here. Point shooting drills have done me well in the past, but mainly for time that i wasnt able to or didnt have the time to properly bring my weapon up.
Ive found that when left to my own devices, i revert to pointing at my target with my trigger finger and keeping my front sight in my periphery while mostly ignoring the rear, a blend of point shooting that my granddad taught me when i first started carrying.
I've only ever gotten glocks with factory night sights.
Glock basket is functional but chintzy.

Perfectly functional, I can hit a standard IPSC target at 100m with my 17 easily, people who complain cant shoot and look for excuses, same with rifle shooting, so much gun accessories are just a gimmick to take money from idiots that think they will get better with more shit and less practice.

then trust your feel. many guys i know get rid of these colorful christmas trees. more distraction than help. personally i prefer all green self illuminating tritium. not as bright as fiber optic, but always bright constant for years. you cant me retarded enough to align the 3 dots wrong , because they are of same colour.
they would have huge gaps and you wold aim your gun 45 degree offset to your eye sight line.
your example also has the problem that green is perceived as the brightest colour from the human eye, red as the dimmest. you dont want your front sight dim and rear sight shining
