I need to get some work done on my 1911, and will require a refinish. However I can't decide to just reblue it, or go for a more functional parkerizing job.

Parkerizing:
a method of protecting a steel surface from corrosion and increasing its resistance to wear through the application of a chemical phosphate conversion coating.
Bluing:
"Cold" bluing is generally a selenium dioxide based compound that colours steel black, or more often a very dark grey.
"Hot" bluing is an alkali salt solution, referred to as "Traditional Caustic Black", that is typically done at an elevated temperature, 135 to 155 °C (275 to 311 °F).
"Rust Bluing" and "Fume Bluing" provide the best rust and corrosion resistance as the process continually converts any metal that is capable of rusting into magnetite (Fe3O4).

Fairly certain Parkerizing adds a thin layer of material protection to the firearm to protect it, whereas bluing changes the actual surface composition of the steel. I may be mistaken but it's controlled rust that's figuratively frozen. Correct me if I'm wrong.
If it was originally blued, reblue it OP.

That's because parkerizing isn't intended to be a top coat.
Bluing wears a lot better than parkerization, which is something to consider if your 1911 is a nice one. There's something to be said for a parkerized finish on a Government-styled 1911 though.
