You will need to experiment with a fireworks fuse. Put one with 5 seconds of time into a narrow tube. Have it ignite with a spring powered blank.

This is dangerous. Experiment with every new addition extensively and under controlled conditions. Use an electronic match from a model rocket to remote detonate if you need to.

I don't know if anyone knows the answer, but were those "pineapple" grenades shaped like that so they would fail and break specifically along those indentations?

If so, it seems that grenade bodies like that are one thing in weapons manufacturing that you could actually home-cast, seeing as catastrophic failure isn't such a bad thing. Plus they'd look darn cool, yo.

Also, if you didn't want to do a timer, an impact grenade like a throwing dart or mortar could be pretty easy to design. Just have a pin that holds the end cap/firing pin out of the frame, take out and throw. I think the RPG Ian did a video on was like that.

On the inside, have a short bit of pipe, like an inch long, cover one side with mesh (so it doesn't get smothered, no sure if necessary?), the other side the cut-down primer end of a shotgun shell, and hold it inside the housing with like three set screws that go through the outside at 120° and just hold the inside pipe clamped down in the middle. Then fill the rest of the housing with whatever.

Personally, I suggest adapting the housing to fit a whipped cream can. Psychological warfare, they'll think its the end of days with the marshmallow man from the Ghostbusters movie (number 2 I think?)
