Exactly how effective would rapiers be if you were to compare them to the earlier centuries?
Say you take an undetermined amount of skilled rapier swordmen and put then anywhere between 8th-16th century how effective would they be against the arms and armor of the time?

Dunno how effective against padding and/or mail. Probably only doing light damage.
Don't even try it against plate armor. The fine point won't do well stabbing the joints.

Rapier is literally the perfect dueling weapon, it would defeat all other wielders unless they too had a rapier.

What about a full sized two-hand Estoc?

They're not really in the same category. An estoc is an actual combat weapon, as opposed to the rapier's daily carry civilian status.
The real difference is that Estocs are extremely rigid and don't have blades at all, which lets you get as much leverage as you need to jam it right into joints and faceplates but isn't really as good as a rapier against a low-to-no armor targets.
Traditional rapiers are very springy (Making them bad at jamming into hard joints) and usually have a cutting blade, so you can cut an unarmored enemy to ribbons.

Not very effective. Against common soldiers and brigands, the rapier would excel and quickly become a rumor among the surrounding area. On the battlefield, it would do quite terribly since most battles were fought with knights and professional soldiers who generally had fairly comprehensive steel protection.
Rapiers excel in situations where your enemy is not wearing any hard armor, or where you need reach from horseback against dudes who are also not wearing armor. Weapons are a product of their time and place.
