I'm a UK resident and in all honesty I have no need to prep. My workplace is just up the road and I work at a military museum.
We have a literal shit-ton of weapons ranging from flintlock muskets to percussion rifles to mosim nsgant and Enfield rifles to an anti tank rifle and a browning m1919a4 and even a small cannon. With, barring a few exceptions, all of them being live.

Oh, and we also have enough swords to pull a hellsing ultimate Father Alexander murder spree.

What scenario?
If you're a lone wolf, a solid "big knife" type is the best primary. Khukri, machete, gollock, bolo, what have you. Keep it maintained (look up how to sharpen these tools for an effective edge), train when you can. Secondary arms might be non-firearm projectile weapons, most likely a crossbow but possibly a short modern bow with a serious draw weight. Again, you need to practise, so you'll be joining an archery club. DO NOT mention that you're training for combat or defence to anyone there, ever.
For a group defence scenario (likeminded friends/neighbours with mutual defence agreement for more minor crises as well as SHTF) then divvy up armament duties, and have enough material to make solid simple weapons for family members or recruits. Enough pipe or oak dowel to make clubs for an extra ten people could make your mob the winner in confrontations with others. Read up on unit tactics and try to remember how to form a block, how to retrieve casualties from a front rank, the basics. You'll be shouting it at men fighting when you recall it, so get a few simple axioms 100%, don't go reading how to win Agincourt.

Two of us have built our own firearms in the past and one of us still does. Several of us also have some training with bows, crossbows and firearms. And we all know how to build weapon d and armour, some of us having our own supplies.
And we also know how to build fortifications.

Also, op, why do you want nonetheless weapons? I have been shot in the neck with a paintball gun from within a foot and it did not even break the skin. The only thing that is going to stop is a peeved house cat. A mob or even a single armed assailant will rip your shirt long before your paint gun does anything notable.

Get yourself a 12 foot/pound air or spring rifle. With heavy pellets it will deter assailants.
