Easily the biggest weakness with trains. They can only go forward or backward and most tracks are on maps.
Though IIRC they were actually pretty proficient at fixing tracks during WW1. Destroying bridges put a stop to them however

Depends on how you go about it. Tracks can be fixed in a rather short time unless you stay to harass the repairs which I guess is where tank train comes into the picture

Sabotaging train tracks to get trains to derail is harder then you would think.
If you want to stop a train from passing you have to blow up a bridge or put a bomb crater on the tracks because anything short of that is easy to fix.
