Not quite /v/ enough since it's not quite a game as it is a 3D weapon model viewer with interactive elements and (of course) disassembly and assembly.
I find it quite educational and it has shown me visually how certain weapons and their mechanisms function (things like burst fire selector switches in the M4, blowback and open bolt mechanisms, etc)
It's free and on Steam so you can try it out now. You start with the AK-47 and Colt 1911 and progress by earning points for mastering each weapon. Not the best system for progressing, but alas, the content is good and I've enjoyed it so far.

It's nice for seeing the general disassembly and assembly of guns, but the game mode is fucking stupid with its arbitrary "you must do this before doing that" bullshit.
