That said, it'd be incredibly difficult to track down aforementioned operator if said operator were to, say, eliminate the offending party and leave evidence of aforementioned abuse in eyesight of the body. In this purely hypothetical situation, it behooves the operator in question to remember that many officers of the law are highly sympathetic with the struggles of animals, and seek to punish the abusers heavily.

It depends where you live, the state. Some states do allow you to use deadly force to protect property. Since a dog is effectively registered via a dog license, the courts have held that dogs are property. Now, does this mean a DA wouldn't charge you? Who knows. Does it mean that a jury would or wouldn't convict you? Who knows. If you could show that the attacker was attacking the dog in furtherance of a felony or presented a risk, to your others, of death or seriously bodily injury then you would have more legal ground to stand on for your actions.
