I'm really not an expert, I've never been to Japan. A collector had a blade from http://www.honmamon.jp/fs/honmamon/c/gr595
And for the price it is insane, tamahagane steel sandwich construction for the blade, buffalo horn fittings and mahagoni handle, and everything perfect. those will run you $200-300.
There are cheaper models which use paper steel instead of tamahagane, they run around $100, and make no mistake, they are still insane quality and sharp as fuck.
best check some knife or outdoor stores wherever you may go in Japan. Other cool stuff are Kiridashi knifes, they'd make a decent neck-knife.

Yo take care, Kindjals have some complex blade profiles, generally they are very thin with a springy hardness, grooves and ridges give them somewhat more rigidity, but the blades are normally thin like a chefs knife. Also, check for their asymmetric grooves, like you hold the blade out, and the top-side ridge is on the right and the bottom one on the left.
