I went 16. Partially because I didn't see any kits with 20" barrels, and also because I like the handiness of a 16'' barrel over the longer 20'' (I realize it's only 4'', but still). I wanted a easy to maneuver rifle that could reach out while still being a little bit on the short side.

I don't think 20" barrels are inherently much more accurate than 16" barrels, but 20" is the "correct" length for a military build I guess. 16" gives you the shortest barrel with a non-pinned muzzle device too, which is nice. 14.5" means you have a pinned muzzle device and that cuts down on your options later on.

I have only handled one TAR-40, but the fake wood seems to have been a design choice to make the rifle slimmer without risking cracking stockwork. Keep in mind that it is 308 and not 223, but is surprisingly svelte.

They are more showpieces for Turnbull's gunsmithing services than market viable rifles. That said, I would buy the receiver set if they over were to sell them alone.
