It may not be a 'combat respirator' but it will certainly protect me against a variety of things depending on which cartridges I put on it. Currently have multi-gas/acid-gas, organic vapors, and particulates.

Question. A lot of surplus sites say their gas masks are "for display only". Are they saying this just to cover their asses legally? Is there a way I can safely test a gas mask on my own, short of spraying homemade mustard gas in my face?

Pretty much. These things are in no way OSHA/ANSI rated.

Yeah, more or less, surplus masks with 40mm NATO or GOST threads are the best way to go, so long as the mask seals, then its the filters that you should focus on.
Avoid cheek filter masks like that M10m you have though, in date replacement filters no longer exist, all are outdated, and no longer in production.
