OP, I was in the same position a few years ago. However, it was my grandma's property in Texas. We knew that they were the meth heads that moved in behind her property. They won't just let you be. If they find the cameras, they will destroy them. They threw probably 5+ hunting cameras in the pond and started wearing bandanas over their faces. The police and game warden wouldn't do anything. don't bother trying to film them poaching, evidence they were in the vicinity without good reason and your word should suffice to stop them coming back
put the camera high, so you might get to see what's in the back of their truck

keep a log of when you suspect there are poachers, then match it to the camera
keep damaged signs as evidence the trespass wasn't accidental, they might say "we didn't take them down", but shit someone did and if they were there it's a fair bet nobody will believe them

do the same as step 1, just so you know who you are dealing with, is it regular poachers?
people from another area?
are there many of them, a few; what do they hunt etc
also you can claim the inaction of the police as justification for anyhting you do past this point, just saying "I made a report and nothign happened" doesn't cut it
you need to say "I gave the police evidence, on multiple occasions, months passed and I saw no evidence of investigation or a cease in poaching"

3. spread the word, tell everyone you have seen vehicles and have been recording license plates

4. form a committee with other local landowners, even if you only have a group email and nobody puts much effort in, your organization gives you collective credibility, and poachers will be less inclined to mess with any of you
lobby local politicians, tell them to put more pressure on police to investigate
you pay rates, you all vote; that counts for something

5.the poachers have a natural advantage over you because they know who you are and where you live
you can move a single camera periodically to track which direction the poachers are arriving from, putting the camera on main roads
remember you don't need license plates after you have identified the vehicles
