Because Sherman realized there are better ways to win a war than killing the most people. He hated war. And the way the ACW was fought, meant both sides constantly clashed in giant bloodbaths, there was no "deciding factor" in any of the battles like there were in European conflicts. The battles primarily relied on infantry, and were essentially giant meat grinders.
Sherman recognized that instead of throwing men at each other to die, why not destroy the enemy's ability to wage war altogether? So he targeted their infrastructure, their economy, and most importantly, their morale.
That very idea is still in practice today. It's essential to modern warfare.
