Because different rounds are good for different things. 6.5 Creedmoor has a similar range to .308, but shoots flatter, making it ideal for long range target shooting. .300 Blackout retains energy better from a short barrel and suppressed than 5.56. The whole reason calibers get invented is to address some fault with the current standard.

Why the fuck do you care? People can shoot whatever the fuck they want. 5.56 and .308 are popular and common because of the ammount of rounds produced, thus driving down cost, not because it's necessarily what a person wants to use for a specific purpose.
Sure, I could drive a Honda Civic through rough of-road terrain, and it might be ok, but a custom 4wd vehicle would do better, but it's certainly less common
