I'll admit that that not all of the projectiles will hit, most will and there's nothing the jedi can do about that, but the ones that hit the lightsaber would be deflected due to the metal contacting the lightsaber turning into gas and expanding massively, pushing the bullet away and giving the jedi lead poisoning from breathing in lead gas. Hell, it probably doesn't even need to fully contact the saber to do that.
