Interestingly, the aircraft all the british pilots wanted was the sopwith dolphin, because of it's high ceiling, it wasn't used for ground attack, so had a much lower casualty rate.
Also, would recommend reading Winged Victory if you're interested in the air war

Overall probably the Fokker DVII. Late war fighters were technically better but saw too little use.
