why to do it besides thats what they say is that grease has better staying power and does better for the action in the M14.
Negatives of grease are that it pics up more crap than oil generally and it oxidizes and thickens over time so it should be removed (easily enough with a cloth) and reapplied if your gun has been in storage a while. It also doesn't do the best in the arctic but it does good in heat and I am in heat. See full field manual for all eventualities.
