Look up old cop vests. Germans rate their kevlar vests not only for their bullet-protection, but also for stab. LV1-2 are for soft armor, and pretty much equal NIJ II and IIIA, with added stab resistance. 3-4 are almost equal to NIJ levels III and IV.
Alternatively you gotta look up new vests with stated stab-protection.

Knitwear isn't usually welded or riveted together, you know.
Regular Kevlar vests protect pretty well against knives, better than leather, at least. it won't stop a really determined stab with a sharp, thin knife or spike, but it'll stop any slash and most normal stabs.
Basically, a regular kevlar vest isn't great if you're a prison guard, but it should be fine for almost anyone else.

Riveted in history, welded in the present, since we have spot welders.
What's your point?

My pent up autism tells me to modify a thick leather jacket with extra padding to protect from blows and possible stabbing.
But then again, I wonder what the fuck I'd use this for and then I just fuck off thinking about being a super hero
