Mule deer can get pretty beefy. 30-06 would cover that. But with the advances in hunting rounds any of the smaller rounds mentioned could be just as viable for all I know.
When I think of a .243 I don't think mule deer I think Southeastern white tail as the max.

If you plan to actually eat most of what you kill, 30-30 or any other intermediate rifle cartridge will work fine. If you don't want to eat the little critters, .308 is a good choice because ots not too expensive and will work on almost anything in north America

7mm08 has excellent ballistics and I have used it on hogs all the way to black bear.
The best intermediate cartridge is 6.5x55.

243 is a real favorite. 100gr Sierra Spitzer Boattail Gamekings or 80gr Barnes TTSX for whitetail, 58gr Hornady V-max for hyper-sonic varmint exploding.
id probably go 22-250 loaded with a 65 grain gameking.
from small game to deer i think 243 is probably the best option but 22-250 is solid with the right bullets.
What about 8mm mauser? Most heavy bullet American loadings put it on par with 30-30, the 180gr stuff is usually comparable to 308, and the really good European stuff is just over 30-06 in power with the same weight bullet.

Id probably go for 6.5 swede if I had to choose only one rifle round for the rest of my hunting days. Light loads are good for whitetail/boar/coyote removal, heavier loads can handle mule deer/elk/blackbear/bigfoot from range just fine.

The answer is always 12ga shotgun. You can get into a 3" chambered pump with a field barrel that takes screw in chokes and a rifled slug barrel for under $400. I could do 90% of my hunting with a gun like this. You can be hunting grouse on the edge of a meadow one minute, and making a play on a deer the next, just by swapping your shells out. I always carry a few foster slugs while I'm bird hunting, just for this reason.
