I've never been to a gunsmith, but am thinking of getting some work done. How do they usually charge? Mine has a per hour shop fee along with the services seeked.Is this normal?

That's what I thought too, he has an hourly rate, but along with a rate for feed ramp polishing, trigger job etc.

trigger jobs pretty easy, but the sear surfaces will require a jig and experience doing it

Refinishing is way out of your price range to do it personally unless you're going to paint it

Not OP, but if I'm looking for a "drop-in" 1911 barrel, either Nighthawk or Wilson, do I need to bring it to a smith, or is it literally just swapping out a barrel?

Generally a smith will give you an estimate if you ask.

Cajun gun works will install all this for around $200 more than if you did it yourself, and that's about as extensive as any handgun work as you'll find. I had an Apex trigger installed on a M&P for less than $100. As for "fix sights" do you mean drift fixed sights or install new ones? Neither one should be more than $50 and you can do it yourself pretty easily on most guns.
