I don't recall any evidence for or against the former, since I can't remember any knife breaking in KnK or Tsukihime.

For the latter, I believe that any sufficiently thin object just slips in without resistance, given that in Tsukihime, Shiki was initially experimenting he was able to stick his finger in partway.

Yukari isn't that great. Even by the most liberal interpretations of her powers (unsubstantiated by canon), she is at best edging on omnipotence through a very narrow way.

Powerlevel wise, even that particular interpretation isn't that high. There's still truly omnipotent characters, universal scale omnipotent characters, conceptually omnipotent characters, etc.

More accurate and down to earth interpretations gives her decent powers and abilities, which is barely worth mentioning. End of series Naruto could probably bring her down. CCS Sakura would give her more than a fair fight.

Humans are more powerful than even named fairies, with the exception of Cirno and Clownpiece. Magic or no magic, a fairy is a being even Kosuzu could beat up. Also Yukari is not more powerful than Reimu on the sole basis of Reimu being a miko and thus possessing the ability to defeat/seal/kill youkai, Yukari included.

Cirno and Clownpiece are also stronger than low tier youkai.

Durability would matter if and only if Superman tried to destroy the knife. In the "iron pecs will protect me" situation, he's not trying to. And if he is fighting back, we have to decide which incarnation of Superman it is, how fast he is, and a whole can of subjectivity that just becomes a debate about which Superman is the "true" superman.
If Superman's powers are a force field, then it depends on if whichever Shiki we're talking about is focusing hard enough to see death on inanimate objects and concepts (whichever you decide the forcefield is). If they are, they'll just kill the forcefield and Superman loses his powers and then the fight.

The entire idea of powerlevels is that someone with a higher powerlevel can defeat every single person with a lower powerlevel than them, inspired by Dragon Ball's system of the same name.
The Special Tier is reserved for people with absolute and possibly completely omnipotent abilities, that are either restrictive in their nature (I remember Ultimate Madoka being listed as a Special, dunno why she's been removed), or never being shown to directly overpower or defeat anyone else (Lain).

Narrative is the most powerful, and Yukari has the most narrative power. An important plan Yukari enacts is almost guaranteed to succeed, whereas Watatsukis/Hecatia/Eiki don't always get what they want or succeed in their goals.

Reimu will die eventually, but Yukari does not - and it's already spoiled to the 2150s at least in the Maribel stuff that Gensokyo is still alive and full of youkai.

Since it's stated multiple times that Yukari's primary goal is to protect Gensokyo, she's already won every important fight between now and then.

It doesn't matter what group of beings try to destroy Gensokyo, even if they are omnipotent and Yukari is sleeping - they have already lost, and Yukari has already won.

Look at it this way.

On most browsers, you can bring up your browsing history by pressing Control-H. (No, this is not going to become a discussion of werecows.) On Firefox, this brings up a sidebar that shows up on the left side of the window. If you put your mouse over the edge of the sidebar, the cursor will turn into a different kind of arrow. Yuugi can manipulate supernatural phenomenons. Yukari's powers and existence is a supernatural phenomenon. Yuugi can completely control and dominate Yukari.

Also in order to have a border or boundary, you have to have two things, no matter how you twist and bend one of them.
