I have a question for all of you tea otaku, how do you make matcha from sencha? All info online is how to brew matcha, not how to literally create it. I would appreciate if I could get some replies, but otherwise this is a tea thread. Thank you.
>>
Sorry. Matcha and sencha are produced from the same type of plant but different growing practices.
>>
>>16387366
I see. Could you refer me to a page I can read more about this?
>>
>>16387372
Internet. You can search for "Difference between sencha and matcha."
>>
>>16387390
Searched that earlier, had more luck with "how is matcha grown". At least, this source is more detailed than just saying "they are grown in different envrionments". Pretty interesting.

You can actually buy powdered sencha, if that's your thing: http://www.yuuki-cha.com/organic-green-tea/powdered-sencha

But matcha is exclusively made from ground-up tencha: http://www.hibiki-an.com/contents.php/cnID/53
>>
Adding to >>16388247, you could also try gyokuro. It's a tea made from leaves that got shaded for a while before being picked, but the final shape is more like sencha - chopped and not ground to a fine powder.

Yay, a tea thread
Try genmaicha, it's good in the winter!

How long does jaypee steep their sencha?
I usually use water that's just over 80C and steep it for 2 minutes, then I take the strainer with the leaves out and keep it in a separate cup. I know it's still good to steep once again for a new pot, but I never have anyone around to make extra tea for.

I steep for a minute for the first infusion, near instant steep for the second infusion, and the third I go for about 90 seconds, all in a kyusu.

You are Canadian too?
Where do you get your tea? There's a nice place downtown toronto I get it from, a small family run Japanese grocer.

Also thank you for the tips!
I've got a larger tea pot, I think I'll look into getting a kyusu next since it seems better for personal use. Are they similar to the small Chinese clay pots that I've seen? I've forgotten the name.
