Because it isn't headcanon. Headcanon is "there is no actual information about this thing so I'm filling in arbitrary blanks for my own enjoyment". Pairing up characters for art etc is deliberately ignoring author intent just to indulge in works that are appealing to the person. Pairing characters isn't all that different from any other work where a character is portrayed differently from the original, it's just another aspect that is different.

A lot of things people call their headcanon are laughed at because they're large changes to characters or settings that is no longer just filling in blanks, and more of using the original character as a vessel for whatever they want. And also because they use the term headcanon in the first place.
