Sometimes I wonder why any vocaloids aside from Miku even exist. Even in the CFM circle, Meiko and Kaito are who?-tier, Luka and the Kagamines are popular but still can't hold a candle to Miku. IA, Gumi, and Yukari are the only nonCFMloids anyone has heard of, and no one knows what UTAU even is.
If everyone had just pooled their time and resources into Miku, she'd have literally taken over the world by now

A lot of people who don't really like Miku or like Vocaloid for the other characters wouldn't buy games, merchandise, listen to songs, etc. We'd have less fans and less songs being produced. You don't know that. Vocaloid is a musical instrument and musical composition depends on the musical instruments one has available to them. If there were no guitars people wouldn't make rock music. Gigantic OTN was great too, I almost wish it was less lewd so Crypton could play it instead of Migikata no Chou or whatever. That Renai Saiban version with Luka was also good. All in all great, the medley style works but I'd prefer full songs anyway.

I find them distracting because a lot of times they can sound a bit off time even if they aren't just because of a slight extension of a cymbal noise or something. It depends a lot on the difficulty and speed of the song, I'm struggling to clear most 8.5 and can't do anything above yet.

Up to like 7.5 and a few 8 star songs I don't usually get more than 20-30 fine notes and like 10 total of the various bad ones, harder 8 and 8.5 I'm still barely getting standard (like 70.xx%-73.xx%) so pretty crap.

There's several problems with your theory:
1. The vocals are heavily distorted at the timepoint, add the distortion from vocal remover, you get a disembodied voice that doesn't sound like Miku. You have to realize that you can't magically remove the vocals from a clip. It's a filter for frequencies at the human vocal range, which doesn't even line up with miku's. So you can't really know for sure what's happening.

2. Vocalistener does not overlay a human vocal track. It measures the human parameters then applies them to the vocaloid track. If MitchieM used vocalistener, we should not be able to find a human track "hidden" in the mix.

3. MitchieM has gone on record to say that he doesn't use any special software, just a lot of time and effort to mimic human characteristics.

I feel like I'm talking to a conspiracy theorist.

I know, and I believe that's exactly what he's doing.
The human track isn't "hidden" in the song, it's used as backing vocals to help Miku sound more human-like in a part of the song where the music isn't a prominent.
