Seals are pests that breed like rabbits and destroy the fish population. They're so bad that we had to stop fishing Cod off the Atlantic coast for the past 20 years to try and save them from being driven to extinction by seals, and they're STILL slowly driving their population down even with a 20 year fishing ban.

Kind of fucked that clubbing them is considered ok, but either way they need to be culled in even bigger numbers than they already are.

The meat gets eaten, their blubber is used to make seal oil which is a substitute for fish oil. Their pelts are used to make things, they're good for waterproof boots.
