Which country or part of the world would be best for someone to become a hermit in? Something outdoorsy, I was thinking cold and mountainous, but desert could work too.

I'm thinking Alaska already fits the bill, tho there's plenty of places in the lower 48 where you could still manage. In Mexico Chihuahua would be your best choice, it gives you everything from snow half the year on high sierra forests to the deep desert.
