It kinda is fudge, it's caramelised milk.
The taste is really "thick" and strong, it feels like chewing soft caramel. The taste itself is just what you'd expect really but quite intense.

Asadero can mean a lot of things, it's generally just generic for quesadilla cheese and varies by region. As per wikipedia the original is from Chihuahua so probably not a string cheese type. This >>79373085 would be sold as Oaxaca in most supermarkets tho, so while obviously not an artisanal like the one you posted we're spliting hairs here.
