Raw eggs are inferior in terms of nutritional value, I think poached eggs are the best in that regard. Most likely Japanese and others inherited this from the past, when it wasn't so easy to just cook an egg. For speed and convenience and for instances in which you are not able to make a fire for cooking.

When rice get covered with raw egg, it become surely indigestible, hence very low carbo will be assimilated even after our appetite get totally satisfied.
