Considering the population would be pretty low I don't think we'd need many boards to start off. We could fit most of our discussions like GAA, the Irish language, anime and anime porn on one board and later expand if the userbase grows. I wouldn't like to have an /sp/ that's pretty much dead when there isn't a /GAA/ match on.

Well I'll avoid putting a name on anything yet then. I have a feeling it will the one used in the end with how much we're throwing it around, placeholders tend to get popular with the people using them. Besides apart from possible confusion with boards.ie the only other names I could think of are Chan na nÓg and Éirechan, neither of which sound any good. Éireboards has a smooth ring to it if you ask me.

Population is one of the largest issues. In order to get new users we would have to advertise. At least on 4chan we naturally get Irish people who just happen to be passing by, but that wouldn't happen on our own website.
We probably won't even use this site very much, if it even ends up being created.
