it's made by warming soured milk and adding some bacteria, we don't consider it a cheese here but a separate product that comes in different versions
it's unsalted so you can use it for sweet stuff too (german cheese cake is made from quark), I like to put it on bread rolls with jam. some people just eat it on its own
for potatoes you'd mix in garlic, herbs and onions and seasoning of course
quark tastes more sour in my opinion

cottage cheese is made from pasteurized milk and rennet and often washed too
