Around here we make a bean stew boiled with some veggies and meat, mostly chorizo, bacon and blood sausage, yummy pork!

Tradicionalmente se hacía con longaniza y cuero de cerdo cortado en tiras, de ahí el nombre porotos con riendas. Con el tiempo la gente comenzó a usar espaguettis en lugar del cuero por comodidad y esta es la forma actual del plato. En verano, los porotos frescos se preparan con maíz fresco molido, zapallo picado y albahaca, y encima se le agrega una mezcla de manteca con ajo y pimenton (se llaman porotos granados con mazamorra) o con una mezcla de verduras de estación (pilco)

No, es cuero cocido en el mismo caldo que se hacen los porotos para que le aporten gelatina al caldo. Si se tiene a mano, conviene agregar una manito de cerdo y retirarla antes de agregar los espaguetis. Al menos así se hacen en mi familia
