It's THE Portuguese meme food. Brazil and Spain eat it too, but not as obsessively as we do.
It's basically codfish that's salted and dried after being fished and then re-hydrated again 1 day before preparing (a tradition that comes from way back when salting was still used instead of freezing).
It's pretty tasteless boiled, but it's a pretty good vessel for olive oil and some spices so we have literally over a hundred different recipes.
