I think they kept the language until the past few decades, but, like many regional quirks in this country, it's dying. Cajun culture is one of the somewhat venerated subcultures in the USA, to the extent that their food is generally liked and phrases like "laissez les bon temps rouler" are known by Americans outside of that community.

Depends, people from France would probably have a really hard time, but as a Québécois there are many youtube videos of Cajun speakers which I'm able to understand quite easily.

However, a friend of mine (half Québécois, half Acadian) went to Cajun country, and he said that there were many people who spoke in a way that was almost completely incomprehensible to him. So it seems to depend on the speaker, and how thick their accent is.

Whenever there's a naturally disaster like flooding, they all gather together in their motorboats and pontoons and drive them in to give relief like water and food, we call them the "Cajun Navy."
